HOMEMADE BAGELS INGREDIENTS:

  • 500g Flour
  • 7g Yeast
  • 7g Salt
  • 320g Water
  • 2tbsp honey (plus more 2tbsp)
  • Oil for greasing
  • 1tbsp of baking soda (not baking powder)
  • Optional Toppings:
  • Sesame seeds
  • Poppyseeds


Method

  1. In a large bowl, pour flour, honey and (one on side) salt
  2. On the other side of the bowl, pour yeast.
  3. Pour water into flour mixture and mix around with your fingers/hand until a rough dough is formed
  4. Tip the dough onto a floured surface and knead for 8-10minutes.
  5. Cover with cling film and leave until doubled in size (ideally 2-3 hours)
  6. Cut dough into 10 sections and roll each into a ball.
  7. Poke a hole in the centre of each ball and swirl around to make a larger hole (make the hole large as it will shrink when the dough rises)
  8. Cover with cling film and let rest for an additional 30minutes.
  9. Pre-heat oven to 200C/ 180C fan.
  10. Prepare a boiling bath of water, baking soda and additional honey (this gives it a slightly sweet coating and a shiny finish).
  11. Prepare a bowl with toppings of choice.
  12. Place bagels carefully, two at a time into boiling mixture for 30 seconds on each side.
  13. Remove from boiling mixture with a large strainer/slotted spoon.
  14. Carefully place in bowl with toppings, flipping to allow seeds to stick on both sides (or simply sprinkle on both sides)
  15. Bake for 20-25minutes or until fully cooked through and golden brown.
  16. Cool on wire rack.
