Ingredients
2 whole plantains (sliced into cylinders diagonally)
2 tbsp olive oil
Cinnamon for sprinkling
Method
In a non-stick pan on medium heat, pour oil and allow to heat up
Test a small piece of plantain in pan (if the oil bubbles around it instantly then the pan is ready)
Carefully place plantain pieces into pan one at a time (see tips)
Allow to cook undisturbed for around 3 minutes (see tips)
Using a fork, carefully poke and flip each piece
Allow around 3 minutes undisturbed as with previous side
Remove from heat
Using a fork, carefully poke and lift each piece out of the pan onto a lined container/plate to drain
Sprinkle with cinnamon and let cool

Tips
When placing the pieces into the pan, it is important not to panic and toss them in. The oil is going to be hot, so gently rest each piece into the oil.
When cooking, allow to cook undisturbed then lift after a few minutes to check how caramelised the plantains are. If you’d like yours to be darker in colour, leave it a bit longer. Monitor it as plantain can brown quite quickly from one minute to the next.
Be sure to remember that while you are removing pieces from the pan, the others will continue to cook, so begin to remove them before they are cooked to your preference.
Sprinkles can also include cayenne pepper if you appreciate a sweet and spicy flavour.
